These red velvet cake mix cookies from Southern Living are super simple to make and quite delicious! Give these cookies a try and bake them over Christmas break. All you need is a boxed cake mix, oil, eggs, salt, and white chocolate chips.
Ingredients and Instructions:
- 1/2 cup vegetable oil
- 1/2 teaspoon kosher salt (I only did 1/4 salt)
- 2 eggs
- 1 (15.25 oz.) box of red velvet cake mix
- 3/4 cup white chocolate chips
Instructions:
- Preheat the oven to 350°F. In a bowl, whisk together the oil, eggs, and salt (I only did 1/4 teaspoon salt). Next add the Red Velvet cake mix, and once it’s mixed well, fold in 3/4 cup of white chocolate chips. Refrigerate for 15-20 minutes.
- While the cookie dough is in the refrigerator, line your baking sheets with parchment paper, or least spray them with cooking spray. Take about a tablespoon of cookie dough, roll it between your hands, and put it on the baking sheet. These cookies do spread out to make sure to leave a couple of inches room between cookies.
- Bake for 10-12 minutes, until the edges are slightly brown. Allow the cookies to cool and enjoy!

As it says in the original recipe on Southern Living, you can easily change these cookies up and make them your own. Feel free to try a different flavor cake mix, or another kind of chocolate chip. Enjoy baking over the Christmas season!
