These Lemon Crinkle cookies from Southern Living are perfect for Easter Sunday or any spring day! They are simple to make and don’t require much time. Give these cookies a try soon!
Ingredients and Instructions:
– 3 Tablespoons of unsalted butter, melted
– 3 Tablespoons vegetable oil
– 1 large egg, plus 1 large egg yolk
– 1 teaspoon vanilla extract
– 1 Tablespoon Lemon zest plus 2 Tablespoons fresh lemon juice (from 1 large lemon)
– 1 (15.25-oz.) lemon cake mix, (I used Duncan Hines Signature Perfectly Moist Lemon Supreme cake mix, which is also what the recipe suggests)
– Around 1/3 cup granulated sugar, for rolling
– Around 1 1/2 cups powdered sugar, for rolling
Instructions:
1. Combine the melted butter, vegetable oil, eggs, vanilla extract, lemon zest, and lemon juice and whisk.
2. Add the boxed lemon cake mix and stir until well combined.
3. Place plastic wrap over your bowl. Chill your dough for 1-2 hours, or until firm. Preheat oven to 375°F, and line baking sheets with parchment paper. Put your granulated sugar and powdered sugar in separate plates or bowls.
4. Take around a tablespoon of dough and roll between your hands. Roll the dough ball in granulated sugar and then between your hands, to ensure it sticks. Roll in powdered sugar, and roll between your hands. Finally, roll it in the powdered sugar once more.
5. Space cookies a few inches apart so they have room to spread. Bake for 7-9 minutes. Enjoy!
