Healthy Oat Bran Muffins
My family has been making these muffins for a long time! They’re great to make because they are healthy, easy to make, and you can multiply the recipe nicely to make plenty for everyone. 🙂
Ingredients:
Oat bran: 2 cups
Sugar: 1/4 cup
Baking Powder: 2 teaspoons
Salt: 1/2 teaspoon
Skim Milk: 1 cup
Eggs: 1 egg or 2 egg whites, slightly beaten
Honey: 1/4 cup
Oil or applesauce: 2 tablespoons
Directions:
First, heat the oven to 425 degrees. Then mix together the oat bran, sugar, baking powder, and salt.
Next, mix the milk, honey, eggs, and oil (or applesauce).
Add the two mixtures together. At this point you can add some combination of nut/dried fruit/chocolate mixture. I did these with chocolate chips. Another idea is craisin and walnut. 🙂
Next either spray a muffin tray with butter-spray or line it with muffin cups, and spoon the batter into it.
Put it in the oven and cook about 15 minutes or until the muffins are golden-brown. Let them cool before taking them out of the tray. Enjoy!
