Peanut Butter Oatmeal Chocolate Chip Cookies (now that’s a mouthful:)
These cookies are sooo good, and they’re pretty easy to make, too. š They can be made either with or without chocolate chips. I personally like them better without; you get more of the peanut butter flavor.

2/3 cupĀ natural-style peanut butter, unsweetened (Normal peanut butter works fine too, though you may want to take out a little sugar.)
4 tablespoonsĀ butter, softened
1/2-3/4 cupĀ Splenda/brown sugar blend
1 teaspoonĀ vanilla
1/2 teaspoonĀ salt
1/4 teaspoonĀ baking soda
2Ā large eggs
1 cupĀ old fashioned oats, ground in a blender orĀ 1 cupĀ oat bran
1 1/2Ā cups old fashioned oats
1/2-3/4Ā semi-sweet chocolate chips or mini chocolate chips
Directions:
1. Preheat oven to 350 degrees F.
2. Lightly grease 2 baking sheets or line with parchment paper.
3. Cream the peanut butter, butter, sugar, vanilla, salt and baking soda in a medium bowl.
4. Beat in the eggs, scraping the bowl once they’re incorporated, then ground oats (or oat bran), old fashioned oats and (if you use them) chocolate chips.
5. Drop the dough by tablespoonfuls onto the baking sheets. (I made mine about three to four tablespoons each instead of one.)
6. Bake the cookies, reversing the pans midway through (top to bottom, bottom to top), until they’re barely set, and just beginning to brown around the edges, 11-13 minutes. (Definitely don’t cook these too long; they taste much better chewy than crunchy.)
