Baked Sweet Potato Fries
I made these for dinner a week or two ago, and they were yummy. I made the whole bag of potatoes, and my family probably could have eaten more. 😀 They also are pretty easy. (Note: they are gluten free. You may want to make sure the cornstarch has a gluten free lable on it even though pure cornstarch is guten free.)

Ingredients:
sweet potatoes, about one large per person, depending on how many fries you want
2 teaspoons cornstarch per large potato
1 tablespoon olive oil or coconut oil per large potato
cinnamon sugar, salt, cayenne, curry, pumpkin pie spice, garlic, or anything
Directions:
Preheat the oven to 400 degrees. Put parchment paper or a silicone baking mat on a baking sheet (or sheets) and set aside. Peel the potatoes and cut off the ends. Cut the potatoes into slices about 1/4 in thick.
Put the potatoes in a large bowl or zip lock bag and toss with cornstarch. Then pour the potatoes in a strainer and empty the bowl to get rid of extra cornstarch. Put the potatoes back in the bowl and add oil and seasoning. I separated my potatoes into three separate containers and put cinnamon sugar in one, salt, in another, and garlic and salt the last.
Line the potatoes on the baking sheet; make sure you don’t crowd them. Bake for 15 minutes, flip them, and then bake for 10-15 more minutes, turning the sheets around so the fries do not brown unevenly. After they bake, you can either eat them right away, or, to make them crispier, turn off the oven, open the oven door, and leave them there for about another 30 minutes. Hope you enjoy them!
