Cranberry Orange Breakfast Bread
This recipe is for an easy-to-make and quite delicious cranberry orange breakfast bread.
To begin, you will need the following ingredients:
2 cups all-purpose flour
1 cup granulated sugar
1 ½ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon salt
¼ cup butter, softened
1 large egg, beaten
¾ cup orange juice
3 cups fresh or frozen cranberries, roughly chopped
Note: 3 cups is a lot of cranberries; 2-2 ½ cups of cranberries works better
1. First, preheat the oven to 350 degrees F and spray a 9×5 loaf pan with non-stick cooking spray.
2. Next, whisk together flour, sugar, baking powder, baking soda, and salt in a large mixing
bowl. Using a fork or your fingers, cut the butter into the flour mixture until crumbly.
3. Add egg and orange juice to crumble mixture and mix until combined.
4. Fold in cranberries.
5. Pour batter into prepared loaf pan. Bake for 1 hour and 10 minutes or until a toothpick inserted into the center comes out clean. Let cool completely on wire rack.
